Leslie Beck Featured Recipe

Chicken Fajitas

Ingredients:

Marinade:
2 tbsp lemon juice
2 tbsp pineapple juice
1 tbsp canola oil
1 tsp red wine vinegar
1 clove garlic, minced
1 tsp chilli powder

½ tsp

dried thyme

12oz boneless chicken breast, cut into strips

1 tsp

canola oil

2 red bell peppers, cut into strips
½ medium onion, chopped
8 6 inch (15cm) soft whole-wheat tortillas
low-fat salsa, fat-free sour cream,
lettuce leaves, and chopped tomato, as garnish

Directions:

In a shallow bowl, combine lemon juice, pineapple juice, oil, vinegar, garlic, chilli powder, and thyme. Add chicken strips; marinate for 30 minutes, or cover and refrigerate overnight.

In non-stick skillet, heat 1 tsp (5mL) oil over medium heat. Add chicken, bell peppers, and onion, stirring until cooked through.

Serve chicken fajita mixture in whole-wheat soft tortillas with salsa, fat-free sour cream, lettuce, and chopped tomato.

Serves 4

Note: The Nutrition Facts Panel was calculated without the individual garnishes (sour cream, salsa, lettuce and tomato).  Choose a lower fat sour cream to reduce the amount of added fat and a salsa that has a lower amount of sodium to reduce the amount of added salt.
